Pssssh. Who said sweet potatoes were only for lunch and dinner?

YA NEED THESE:
4 sweet potatoes
1/4 c water
3 medium apples peeled, diced
1 tsp cinnamon
1/2 tsp ground ginger
1/4 tsp sea salt
1/8 tsp ground cloves
1/3 c almond (or peanut) butter
1/2 - 3/4 c coconut yogurt, unsweetened
1 tsp chia seeds
4 T chopped walnuts or pecans
THEN YA GOTTA DO THIS:
Roast those taters! Wash, prick, roast at 425 F for about 45-50 mins, depending on size.
Make that filling! To simmering pan of water, add apples, sugar, spices, salt. Mix to coat apples. Cook 10 mins until apples are soft, but not too soft! We're not trying to make applesauce over here. Add more water as needed.
Put it all together! Spoon a few tablespoons yogurt into each baked sweet potato. Divide the cooked apples + nut butter between the potatoes. Top with chia seeds and chopped nuts.
